krista's chili


Krista's Chili

2 lbs. ground beef
1 large yellow onion
olive oil
2 15 oz. cans light red kidney beans
3 15 oz. cans dark red kidney beans
2 28 oz. cans crushed tomatoes
1 10 oz. can Rotel diced tomatoes and green chilies
1 12 oz. can tomato paste
1 15 oz. chili beans with chili sauce
2 T. apple cider vinegar
2 T. dijon mustard
1 T. sugar
2 oz. chili powder
1 T. garlic powder
1 t. crushed red pepper flakes
salt
pepper

Add chopped onion to olive oil in pan until soft. Add ground beef until browned and drained, and transfer to a large stock pot on low heat. Add all remaining ingredients. Simmer for 30 mins. Top with shredded cheese and sour cream. This chili is a medium spiced chili, add more pepper flakes or chili powder for more heat. For an extra kick, add your favorite dark beer.
